Eggless vanilla sponge cake


Tried out this recipe from Madhuri's recipe at Cook Curry Nook and it was perfect.. Thanks Madhuri for the recipe

Ingredients

1.5 cups of all purpose flour/ maida
3/4 cup sugar (powdered after measuring)
1.25 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1 cup thick curds beaten
1/2 cup cooking oil
2 tsp vanilla essence


Mix in the powdered sugar with the curd. Add the baking soda and baking powder and stir lightly. Keep aside for 2-3 minutes till it gets frothy. Add oil and vanilla essence to it and mix gently. Slowly add in sieved all purpose flour. Mix gently.

Preheat oven to 200 degrees celsius and bake for 10 minutes. Reduce heat to 180 degrees celsius and bake further for 20-35 minutes depending on size of the baking pan. Since I used small baking pans of various sizes, it got done in 20 minutes. Keep looking for brown spots on the cake and check back if done with a toothpick. If it comes out clean when inserted in the cake, it is done.

* I used chocolate vermicelli, chocolate icing and coloured sugar balls for the garnishing. Sugar balls and chocolate vermicelli should be added to the cake before baking. For chocolate icing, let the cake cool really well and then garnish with chocolate icing.

Eggless Wheat flour chocolate cake



Recipe inspired from Archana's blog The Mad Scientist's Kitchen
Ingredients

2 cups wheat flour
1.5 cups sugar
1/2 tsp cooking soda
1 tsp baking powder
2 tbsp cocoa powder
1 tbsp drinking chocolate powder
1/2 tsp vanilla essence
2 tbsp butter in room temperature
1/2 cup beaten curd
1 cup milk
2.5 grams of Eno fruit salt
2-3 tbsp butterscotch sauce or chocolate sauce

Mix the butter with curd and milk. In a seperate bowl, mix all the other ingredients except Eno. Now add the butter-curd-milk mixture to it and mix well. The batter loosens up in some time when the sugar melts. Keep this aside for 4 hours.
Add Eno to the batter and pour it in a microwave safe greased container..Ensure the batter doesnt exceed half the size of the bowl. Microwave for 10 minutes but keep checking back even minute after 6 minutes in case you try it out in lesser quantity..or else your cake might get burnt. Insert a toothpick to check if done.
Cool and cut into pieces. Spread butterscotch or chocolate sauce over it and serve.

Eggless Vanilla Cake


100% microwave cooking blog completes a year today. Here is the eggless cake recipe for the occassion....
Ingredients (Translation)

200 grams Maida
1 level tsp Baking powder
2 pinches Baking soda
1/2 tsp vanilla essence
Butter- 100 grams or Ghee- ¾ cup
400 grams Condensed Milk
200-300 ml Soft drink

Melt the butter in a microwave safe bowl for around 30 seconds on micro high. Now add the condensed milk and beat well.

Sieve the mix of maida, baking powder and baking soda around 3 to 4 times.

Add it to the butter and condensed milk mix little by little and blend it well using cut and fold technique.

Add the soft drink to get the required consistency and finally add the essence.

Grease a microwave safe bowl and pour the batter.

Microwave on high without covering it for 6 to 7 minutes.

Decorate the cake as desired using cream and icing sugar or strawberry or cherries.

Gajar ka halwa


Ingredients

1 cup of grated red carrots
3 tbsp milk powder
3 tbsp unsweetened khoya
1/2 tsp cardamom powder
3 tbsp sugar
4 tbsp ghee
Few roasted cashews

Mix ghee and carrot and micro high for 3 minutes in a microwave safe bowl. Stir once in between. Check if the carrot is cooked, else micro high for another minute.

Add the rest of the ingredients and micro high for one minute.

Hot and tasty gajar ka halwa ready to serve.

Fruit Custard


Ingredients (Translation)

3 cups of cut fruits like Apple, grapes, banana, chikoo, pomogranate, pear, guava, orange, papaya and all that you like
1 big spoon Custard Powder
1/2 ltr Milk
6 spoons of Sugar( add more if required)
1/4 tsp Cardamom powder
Few cashews and dry grapes
Vanilla Essence or Rose Essence (optional)

Cut fruits into small pieces. Mix custard powder separately in a glass of cold milk. Now add it to the rest of the milk, add cardamom powder, cover and micro high for 4-5 minutes. Stir once in between.

Add sugar and micro high for 2 more minutes.
Add the fruits to it and mix well.

Serve chilled. You could even add a scoop of your favourite icecream to it and decorate with nuts.

Sakkarai Pongal


Ingredients (Translation)

1 cup Rice
4 tbsp Green gram dal
Water -5 cups (4 cups for ven pongal and 1 cup for jaggery)
Cashew nuts -10
4 tbsp Ghee
1/2 tsp Cardamom powder
1 ¼ cup Jaggery

Cook ven pongal without salt and spices.

Grate the jaggery, add one cup water and microwave on high for 2 minutes. Mix it well once after a minute.

Using a strainer, remove the dirt from the jaggery water and keep the syrup again for 3 minutes on microwave high. Add the ven pongal and microwave on high for 3 more minutes.

Add the cardamom powder and roasted cashews for flavour and mix well.

After 3 minutes standing time, your sakkarai pongal is ready to eat.
